Is there a way, in the eStore plugin, to limit the quantity number someone is allowed to enter when ordering?
For example, I do not want people to be able to order more than 25 of any one items at a time from my store. Is there a way to cap the quantity number?

By default eStore will only limit someone from ordering a quantity amount if you don't have it in stock. I can tell you a tweak that you can apply in the code to achieve what you are after. Are you okay with modifying a bit of PHP code?
Added an option for this in the settings menu now. If you do not want to show the quantity in the shopping cart simply check the "Do Not Show Quantity in Shopping Cart" checkbox in the general settings of eStore.
This should prevent your customers from buying multiple copies of the same item.
