I can't find out where the tax settings are for the products?
Demo and help docs say it is in there, but I looked everywhere and I don't see it?
Any ideas?

It should be under "Settings" of WP eStore named "Shipping and Tax Related Settings". I think you need an update for WP eStore. Please see this post on how to get update -
