I need to require fields for checkout like phone, email, address so the customer can’t complete checkout without all information included. Help.
Is there a reason why you can’t wait until AFTER checkout, and get the shipping information from PayPal or whoever you are using for the payment processor?
Have you read the following?

Are you after a setup where the product checkout requires a user/member account on the site. So people can only checkout after they have created an account (kind of like what Amazon does)?
If you ***really*** need to get that kind of information, before allowing customers to checkout, perhaps you might consider using eMember to first “register” your customers before allowing them to buy anything.
I see. Express checkout is great but if customer has failed to provide basic information in their Paypal profile (like phone or street address) then this communicates less than useful information to a store that is shipping product–which is my case.
In order to remedy this it looks like I may need to move to the eMember plugin as well per your instructions. Thanks for the overview.
Your assumption is a little wrong. When a user is purchasing a physical product, estore will send appropriate flag to the PayPal checkout page. PayPal will collect the shipping address from that user and the plugin will give you that address (there is no way to go around that).
Have you done test checkout to see how it works? If you do a test you will see that it works nicely.
